This is a beautiful pan, it looks good just sitting on the stove. I did a quick seasoning and then made a french omelette that slid right out like if you where skating on ice. Very reasonably priced.
Great pan. Solid quality, and great handle.
Heats evenly. I’ve got the large.
I purchased the smaller pan a few months ago and really liked the heavy feel and really smooth surface. The handle though gets hot while cooking but isn't a game killer for me.
I just got the large Sonora and I think it performs even better and so far the handle is fine.
Like I said with the smaller model I love the really smooth surface. I think that in time it'll patina great even though the blue finish is so pretty but short lived.
It's all good though because in time as it develops an aged seasoned surface I'm hoping that it'll make up for the loss of blueness.
I've had other brands and I think these will turn out the best!
